White sauce & pasta

INGREDIENTS

5 cloves garlic

7 table spoon oil

3 tablespoon of flour

2 pinches of organic oregano

1 pinch black pepper

1 liter milk

2 chicken stock cubes

1 teaspoon salt

1 pack of pasta

METHOD

Brown garlic in oil

Add 3 tablespoon of flour. Mix well.

Add oregano and black pepper.

Add milk. Mix well.

Add 2 chicken stock cubes.

Add salt to taste.

Boil pasta in separate bowl. Cook until soft.

Serve pasta and sauce separately.

Annstein’s Pakistani-Japaani Chicken Teriyaki (照り焼き)

INGREDIENTS

1.3 – 1.5 KG Chicken (boneless)
1/4 KG Green beans
1/4 Bell peppers
1 gathee Spring onions
3/4 clove garlic
1 big onion
2 cups Soy sauce
2 Tbl Honey
2 tsp sugar
1 cup 7-up
1 tsp salt
1 tsp pepper

METHOD

Marinade. Put soy sauce, honey, sugar, salt, pepper, 1/2 clove mashed garlic, and half an onion finely chopped in a sauce pan. Heat and bring to a simmer until marinade starts to thicken. Cut the chicken into long thin strips and add to the marinade. Add the 7up. Mix well and leave for minimum of 4 hours. Best to leave it for 12 hours.

Cooking the chicken. Heat oil in a pan and add the other half of the onion finely chopped. Fry until brown. Once the onion is light brown add only the chicken (without the marinade). Cooked for 15 – 20 minutes until chicken is soft & cooked. Once cooked add marinade to the chicken. Heat and then add green beans, and then after 2-3 minutes add spring onions. After 5 minutes add bell peppers.

Rice. Boil up 2.5 cups of rice. Once ready drain the water from the rice. In another sauce pan heat oil for fry up 1/4 clove of garlic then once brown add the spring onion. After 2 minutes add the cooked rice and mix well until oil, garlic and spring onion are well mixed into the rice. Cook only for 3 minutes or so.

Serve the food.

Aloo Palak آلو پالک (Spinach & Potato) curry

INGREDIENTS

  • 3 gati spinach
  • 8 garlic pieces (big ones)
  • 2 green chilies
  • 2 tomatoes
  • 5 potatoes diced
  • Haldi 1 tsp
  • Salt
  • Red Chilli powder 1 tsp
  • Oil 1/2 cup

PROCEDURE

    • Cut of 75% of the stems of the palak (spinach). Chop into small pieces.
    • Wash spinach and strain.
    • Mash in mortar 8 garlic pieces, 2 green chilies, with 1/2 tsp salt.
    • Chop tomatoes into small pieces. Add haldi and red chilli powder to tomatoes with 2 tsp salt.
    • Heat oil in pot and add garlic/green chili to the oil until a light brown.
    • Once garlic is light brown add the tomatoes with 1/2 cup water.
    • Cover and cook for 3 minutes. Mash tomatoes into a paste with spatula.
    • Add in potatoes and mix well with the paste. Add another half cup of water with potatoes. Cover the pot and reduce heat to medium heat. After two minutes mix well and cover again.
    • Remove cover and cook for 5-7 minutes while mixing and then add spinach. Must spinach down into pot and add 1 cup water with spinach.
    • Cover and reduce heat. After 5 minutes mix well and cover again.
    • Cook on medium heat for 20 minutes until enough water has dried up.
    • Eat with khamiri roti.

AKROHT AHLI CHUTNI (walnut chutni)

INGREDIENTS

Pohdeena (Mint)                             half handful

Tanheya (Coriander leaves)           handful

Walnut                                              4

Green chili pepper                           1

Tomato                                             1

Salt                                                    1/3 tsp

Yogurt (local)                                  1/8 kg

 

METHOD

Using mortar and pestle grind mint and green chili with salt.

Then add walnut and grind.

Add coriander and grind.

Lastly add tomato and grind into paste.

Then add yogurt and mix well.

Put into separate dish and store in fridge.  Eat within 3 days.
