Mum’s Potato Salad

INGREDIENTS

· 15 potatoes

· 9 eggs

· 6 tsp vinegar

· Salt

· 1 cup oil

· Black Pepper

· ½ onion

METHOD

POTATOES

Boil potatoes with 1.5 tsp salt. Boil until potatoes are soft and mushy.

Hard boil eggs in separate pan.

Partially mash half the potatoes.

Shell the eggs and then chop the eggs into quarters.

Mix the potatoes and eggs together. Add 1 tsp salt and ½ tsp black pepper.

MAYO

Blend 3 eggs, 6 tsp vinegar, ½ tsp salt and 1 cup oil in the blender.

Then add the Mayo mixture to the potatoes/eggs.

Mix the potatoes and mayo together with hands.
Put in fridge and let it thicken overnight.

Add ½ a diced onion to the salad and mix well.

Ready to serve.

Asif’s red sauce chicken with pasta

This is a great recipe I learnt from my brother. Even he doesn’t have a name for it. It’s somewhat Italian(ish) and tastes great. He sort of experimented around and this dish became a staple of his diet while studying in the Cotswold area of UK.
Asif’s red sauce pasta recipe

Boneless chicken (K&N) 1 KG Oregano 4 tablespoon Garlic 1 large bulb Onions 3 large Tomatoes 6 large Mushrooms (whole pieces) 1 can Salt & Pepper As needed Olive Oil As needed Lemons 4 lemons Penne Pasta 500g

· Finely chop the garlic, tomatoes, and onions.

· Blend garlic, tomatoes, and onions in a blender.

· Cut K&N boneless chicken into small thin pieces.

· Heat oil in wok and once hot cook the chicken with 2 tsp salt added.

· Drain excess water from chicken due to frozen nature of chicken. Cook chicken until it is a light brown color.

· Cut the mushrooms into halves.

· Added blended sauce to the chicken.

· Add oregano 4 tablespoon to chicken with ½ tsp black pepper.

· Cook until sauce becomes thicker and reduce moisture in the sauce.

· At the end add the mushrooms and cook for few minutes more.

· Squeeze 4 lemons and add to the chicken

· Serve with Penne Pasta.

White sauce & pasta

INGREDIENTS

5 cloves garlic

7 table spoon oil

3 tablespoon of flour

2 pinches of organic oregano

1 pinch black pepper

1 liter milk

2 chicken stock cubes

1 teaspoon salt

1 pack of pasta

METHOD

Brown garlic in oil

Add 3 tablespoon of flour. Mix well.

Add oregano and black pepper.

Add milk. Mix well.

Add 2 chicken stock cubes.

Add salt to taste.

Boil pasta in separate bowl. Cook until soft.

Serve pasta and sauce separately.

Annstein’s Pakistani-Japaani Chicken Teriyaki (照り焼き)

INGREDIENTS

1.3 – 1.5 KG Chicken (boneless)
1/4 KG Green beans
1/4 Bell peppers
1 gathee Spring onions
3/4 clove garlic
1 big onion
2 cups Soy sauce
2 Tbl Honey
2 tsp sugar
1 cup 7-up
1 tsp salt
1 tsp pepper

METHOD

Marinade. Put soy sauce, honey, sugar, salt, pepper, 1/2 clove mashed garlic, and half an onion finely chopped in a sauce pan. Heat and bring to a simmer until marinade starts to thicken. Cut the chicken into long thin strips and add to the marinade. Add the 7up. Mix well and leave for minimum of 4 hours. Best to leave it for 12 hours.

Cooking the chicken. Heat oil in a pan and add the other half of the onion finely chopped. Fry until brown. Once the onion is light brown add only the chicken (without the marinade). Cooked for 15 – 20 minutes until chicken is soft & cooked. Once cooked add marinade to the chicken. Heat and then add green beans, and then after 2-3 minutes add spring onions. After 5 minutes add bell peppers.

Rice. Boil up 2.5 cups of rice. Once ready drain the water from the rice. In another sauce pan heat oil for fry up 1/4 clove of garlic then once brown add the spring onion. After 2 minutes add the cooked rice and mix well until oil, garlic and spring onion are well mixed into the rice. Cook only for 3 minutes or so.

Serve the food.
